Ingredients (makes ~450ml syrup)
- Zest of 3 lemons and 3 limes (microplane — zest only)
- Juice of 3 lemons and 3 limes (~180ml total)
- 300g (1½ cups) white sugar
- 250ml (1 cup) water
- 1 tsp citric acid
- Pinch of sea salt
Method
- Combine sugar, water, and zests only. Heat gently until sugar dissolves. Simmer 3 minutes.
- Remove from heat. Add citrus juices, citric acid, and salt. Stir to combine.
- Strain through fine mesh. The oil from the zest infuses the syrup during the warm steep — this is the aromatic backbone of the soda.
- Bottle and refrigerate. Keeps 2–3 weeks (fresh citrus juice reduces shelf life vs. all-sugar syrups).
Making Lemon-Lime Soda
Combine 40ml syrup with 300ml cold sparkling water over ice. Standard ratio: 1:7.5. This is lighter than most sodas — lemon-lime should taste refreshing and crisp, not sweet and heavy.

Why does my homemade lemon-lime soda taste flat compared to Sprite?
Commercial lemon-lime sodas are carbonated to approximately 3.7 volumes of CO₂ — very high carbonation that delivers a sharp, lively bite. Make sure you are carbonating to that level (18–22 PSI at 38°F). Also, commercial sodas use more sugar than this recipe — if you prefer sweeter, increase syrup to 60ml per 300ml water.
Can I use bottled lemon and lime juice?
You can, but fresh citrus is noticeably better. Bottled juice lacks the fresh volatile aromatics and has a more cooked, preserved character. If you must use bottled, add more citric acid to compensate for the reduced brightness.
