What Makes Cream Soda Taste Like Cream Soda
Cream soda has no actual cream. The name comes from the smooth, creamy mouthfeel created by the combination of vanilla, sweetness, and carbonation. The vanilla dominates completely — which means quality vanilla is the most important ingredient. A vanilla bean syrup tastes noticeably better than extract-only, though extract works fine for everyday use.
Ingredients — Vanilla Bean Version (makes ~400ml syrup)
- 2 vanilla beans, split and scraped (or 2 tsp high-quality pure vanilla extract)
- 350g (1¾ cups) white sugar
- 350ml (1½ cups) water
- ¼ tsp citric acid (balances sweetness, optional but recommended)
- Tiny pinch of sea salt (amplifies vanilla)
Method
- Combine sugar, water, vanilla bean seeds and pods (or extract). Heat gently, stirring until sugar dissolves completely.
- Simmer 3 minutes only. Remove from heat and steep covered for 30 minutes. Vanilla is delicate — long cooking degrades it.
- Strain out vanilla pods. (Rinse and dry them — they can be used to infuse sugar or custard later.)
- Add citric acid and salt while still warm. Stir until dissolved.
- Bottle and refrigerate. Keeps 3–4 weeks.
Making the Cream Soda
Add 45–55ml syrup to a glass over ice. Pour 280–300ml cold sparkling water gently over it. This is a lighter, more elegant soda — do not over-dilute. Standard ratio: 1:6.
For a richer, dessert-style cream soda: increase syrup to 70ml and use a slightly lower carbonation level (2.0–2.5 volumes) for a softer, rounder bubble profile.
